CHILLIY PICKLE/MOR MILAGAI RECIPE
Mor milagai recipe for step wise pictures.
Today i am going to prepare mor milagai its greatest sidedish for curd rice lemon rice tamirand rice ragi porigde and ice briyani(pazaya satham). Green chillies are soaked in the rice starch water and add to much of salt.
Usually pickle recipe prepared with much more salt because stored long term. Then another features are dried with direct sunlight let see how to prepared it

Ingredients
Green chillies take it ur required amount
Salt as per taste
Rice starch water (kanchi thanni) its depends on the green chilly amonut usually used one third of amount
Methods
1.Cleanly washed the green chillies. I m useing fresh green chillies to plug in the garden.
2.Next to punch and make hole in the green chillies by using the needle or stick. If u take big chilly to give two or three holes normally to punch only one hole its enough.
3.Transport the chillies another mud pot or any bucket. Usually mud pot is more suitable for preparing any types of pickle so i m take it mud pot.
4.Add rice starch water (kanchi thanni) its ratio depends on the green chilly i m using one third amount of green chilies.
5.Add salt per taste.After to flipping well the mud pot set it and cover to intact with one day.
6.Next day that the chillies spread out the terrace and dried in direct sunlight. Dried with full day time and collect the chillies in the evening. Green chillies are to exude some water don't pour the water its again again to soak the chillies when its was dry. Because the salt and chilly flavour added in the water
7.Continue the process seven to ten days finally chillies was dried well. Now its ready to use heat oil in a pan to fry the dried chillies. its also used for tempering purpose.
